Curried Potatoes
This vegetarian curried potatoes soup is easy to prepare.

Ingredients You Need

• 2.2 lbs (1 kilo)red potatoes
• 2 carrots, large
• 1 onion, finely chopped
• 2 cloves garlic, crushed
• 1 Tbsp curry powder
• 1 cup cooked peas
• salt, to taste
• 1 cup coconut milk, canned
Directions:
• 00:45 . . . In a pot add a little oil
• 00:48 . . . add onion and garlic
• 00:51 . . . saute
• 00:54 . . . salt to taste
• 00:59 . . . chop the potatoes in small cubes
• 01:05 . . . add boiling water
• 01:08 . . . add chopped potatoes
• 01:12 . . . potatoes should be covered in water
• 01:17 . . . Cover and let it simmer
• 01:18 . . . Chop the carrots
• 01:27 . . . add salt to taste
• 01:29 . . . stir
• 01:36 . . . when the potatoes are cooked
• 01:40 . . . add peas
• 01:43 . . . stir
• 01:45 . . . add carrots
• 01:49 . . . stir
• 01:52 . . . simmer for 3-5 minutes

• 02:02 . . . add curry powder

• 02:09 . . . boil until thick
• 02:24 . . . serve with cooked rice and enjoy!
